I have been wanting to make donuts ever since I have fallen in love with baking. However, I thought that trying to make gluten, dairy, AND egg free donuts would be really hard. That was until I stumbled upon a recipe on Pinterest one day.
The ingredient list was simple and easy to understand, which is always a plus for me. I don’t know about you, but I like recipes with ingredients I can name and easily find in the store. It’s even better though when I have those ingredients already in my fridge and pantry!
I could not believe how good the photos looked on the recipe and the instructions seemed easy enough to follow. I only had one problem, I didn’t own a donut pan. Well, it just so happened that I had a birthday coming up so I put the pan on my birthday list.
Eric being the loving husband he is, bought me the donut pan for my birthday and I was ecstatic! Now I can make these donuts I have been dreaming about! And although the pan was a gift for me, I think Eric was thinking about the donuts he would soon get to eat because of my new pan.
Let me tell ya, this donut recipe is probably the best one you will ever find! Not only is it easy to follow, but it tastes delicious! Eric couldn’t believe how soft and fluffy these donuts are. Pair the donuts with the chocolate icing and you have the perfect donut.
You can also create your own frosting and make it whatever color and flavor you like on your donuts. Below is a picture of a pink strawberry iced donut with rainbow sprinkles as well as a chocolate glazed donut with chocolate sprinkles.
Pro Tip: It’s best to serve the donuts freshly baked and to add the icing when you are ready to eat them. Otherwise, the donuts can get soggy from sitting out with the icing on it.
Chocolate Glazed Donuts
Perfect fluffy baked donuts with a delicious chocolate glaze! And you won’t even believe that they are gluten, dairy, and egg free!
Course: Breakfast
Keyword: Chocolate, donuts
Prep Time: 18 minutes
Cook Time: 12 minutes
Total Time: 30 minutes
Servings: 6 donuts
Ingredients
Dry Ingredients:
1 cup All-purpose gluten free flour (King Arthur's brand is my favorite)
1 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Ground nutmeg
Wet Ingredients:
2/3 cup Non-dairy milk (soy or almond)
1/3 cup Brown sugar
2 Tablespoons Vegan butter or margarine, melted
1 1/2 teaspoons Vanilla extract
1 teaspoon Lemon juice or apple cider vinegar
Chocolate Glaze:
1 cup Powdered sugar
3 Tablespoons Cocoa powder
2 Tablespoons Non-dairy milk (soy or almond)
1/2 teaspoon Vanilla extract
Instructions
Donuts:
1. Preheat oven to 350F. Light grease your donut pan to prevent donuts from sticking.
2. In a large bowl, whisk together all of the dry ingredients.
3. Now in a medium suzed bowl, add all of the wet ingredients and mix them together.
4. Pour the wet ingredients into the dry ingredients and whisk until combined. Be careful not to overmix. You will see some lumps in the batter and that is totally ok.
5. Scoop the batter into a large ziplock bag. I like to place my ziplock bag inside a large cup to help keep the bag sturdy while I pour the batter into it.
6. Cut off the corner of the ziplock bag and pipe the batter into the donut pan evenly. Tap the pan on the counter a few times to get the batter to settle into the pan.
7. Bake for about 10 to 14 minutes until the donuts look fluffy and browned. Remove from the oven and let them cool for about 5 minutes before flipping the pan onto a cooling rack to allow them to cool completely.
8. Once cooled, they are ready to eat! You can serve them plain or add some chocolate icing. See instructions below:
Chocolate Glaze:
1. Add all of the above listed ingredients for the chocolate glaze into a bowl. Mix well and take note of the consistency. If it is too thick, add 1 teaspoon of non-dairy milk. If it is too thin, add some more powdered sugar.
2. Dip the top of the donuts into the glaze and wiggle them until it covers the top half of the donut. Lift the donut back out and set it on a plate to allow the glaze to settle.
3. Cover the donut in your favorite sprinkles and toppings while the glaze is still wet. Leftover glaze can be refrigerated in an air tight container for a couple of days and is a great fruit dip or ice cream topping.
