Ok, I have a confession to make……I am OBSESSED with guacamole!
Now this wasn’t always the case. Up until about 3 years ago, I had never had avocados let alone guacamole. I actually have my husband to thank for my obsession. He loves to have me to try new foods that I had previously not liked. Since I have known him, I have come to like broccoli, mushrooms, salmon, shrimp and medium rare steaks. He still hasn’t gotten me to eat asparagus or black olives yet (although he tries his best).
The first time I tried guacamole was life changing! Well probably not life changing, but it was like angels singing in my mouth. Once I had it a couple times out at restaurants, I started to figure out which type of guacamole I liked best. For all my other guac lovers, you know what I’m talking about, right? There are smooth guacamole that are basically just mashed avocados, spicy guacamole with lots of jalapenos, and then there is my favorite……chunky guacamole with bits of red onion and tomatoes with just the right amount of zing from the lime juice. Yum!
This recipe is my ideal guacamole! And it’s even better that it’s perfectly portioned for just my husband and I. This recipe is quick and easy to make and is a must have for your next taco night! You can also double this recipe and bring it to your next dinner event or a Mexican themed party.

Guacamole For Two
The perfect guacamole recipe for two people to share!

Ingredients
1 avocado, cubed
1/4 cup red onion, diced
1/4 cup cherry or grape tomatoes, diced
1 clove garlic, minced
1/2 lime, juiced or to taste
cilantro, chopped to taste
salt and pepper to taste
Instructions
1. First cube the avocado and add to a large mixing bowl.
2. Next, dice the red onion, tomatoes, and garlic and add to the bowl. with a fork, mash together all the ingredients until you get the desired creaminess. (I know that my husband and I like it chunkier where others like a smoother texture.)
3. Then, add the lime juice, cilantro, and salt and pepper and mix until combined. Here is where you should do a taste test to make sure it has the right amount of lime juice and spices for your taste buds.
4. Finally, serve with tortilla chips and enjoy!
