In our house, rice and pasta are a staple! It is what keeps us full and satisfied (and provides leftovers). So because of that, I am always looking for new recipes to try that involve these ingredients. That’s where Pinterest becomes helpful because let’s be honest, that’s where all the good meals come from. At least in my experience.
When I saw this meal, I knew I had to convince my husband to add it to our Whisk app. The only reason I had to convince him is because he saw the list of directions and since it listed more than one pan/pot to use, he was skeptical. Most of our meals can be made in one pot or pan so I can understand his hesitation.
But let me tell you, this meal was worth the hassle! Especially if risotto is not part of your usual line up of meals. It was a very flavorful and had a great texture. So if you are thinking about mixing up your usual set of meals, I would try adding this recipe into your lineup.
Chicken Risotto

Ingredients
1 Tbsp Olive Oil
1 large Yellow Onion – chopped
3 cloves Garlic
2 1/2 cups Chicken Broth
2 cups Unsweetened Almond Milk
1 1/2 cups Rice
1/2 cup White Cooking Wine
2 Chicken Breasts – cubed

Instructions
Cut up chicken breast into cubes and cook all the way through. Set aside on a plate.
In a medium sized pot, heat up the chicken broth and almond milk until it comes to a boil. Reduce the heat to low and simmer.
Heat up olive oil in a large pan on medium heat.
Add the chopped onion and garlic cloves to the pan. Cook until the onions are soft (about 8 minutes).
Add the rice to this pan and cook for about a minute. Then add the white cooking wine and continue to cook until the wine has reduced completely.
Add the cooked chicken breast.
Add 1 cup of the chicken broth and almond milk mixture to the pan slowly. Bring to a boil and stir until the liquid is absorbed.
Repeat the process of adding the broth and milk mixture slowly until all of the liquid is absorbed.
Once absorbed, the rice should be soft and ready to serve. Top with parsley and enjoy!
