Italian Sausage and Rice

Do you ever have extra onions, tomatoes, and green peppers that you don’t know what to do with? Well then this recipe will help you use them up!

I found that in the summer time, when my garden is flourishing, I always have way too many green peppers and tomatoes. So I wanted to find a recipe that would allow me to use my overflow inventory. Little did I know that this recipe would become a staple meal, especially in the winter time.

This meal is honestly one of my husbands favorites meals we make because it is so simple and quick! Plus you can cook all of it in the same skillet! There are also never any leftovers from this meal because we devour it as soon as it’s ready.

So check it out for yourself. And if you like a little spice in your life, try using spicy Italian sausage. (I’m too much of a wimp to try it myself.)


Italian Sausage and Rice


This meal is almost like a “deconstructed” stuffed pepper. I love how simple it is to make and it’s also very filling!

Cook Time 10 minutes

Servings 2 people

Ingredients

  1. 1 Tbsp Olive Oil

  2. 1/2 Yellow Onion, Chopped

  3. 1/2 Green Pepper, Chopped

  4. 2 cloves Garlic

  5. 1 pound Mild Italian Sausage

  6. 1 cup Uncooked Rice

  7. 1/2 tsp Salt

  8. 1/2 tap Pepper

  9. 1/2 tsp Garlic Powder

  10. 1/2 tsp Dried Oregano

  11. 1 15 oz. can Italian Tomatoes with Juice

  12. 1 1/4 cup Chicken Stock

Instructions


Heat the oil in a large bottom skillet.


Add chopped onion and green pepper and saute until the onions are tender.


Next add the garlic and sausage and cook until the sausage is no longer pink. If need be, break the sausage into smaller pieces to make sure it browns all the way through.


Once the sausage is cooked, add the rice, salt, pepper, garlic powder, and oregano and cook for about a minute.


Then add the chicken stock and the can of tomatoes. Stir together and allow it to come to a boil.


Once the mixture starts boiling, reduce the heat to low and simmer for 10 minutes.


The liquids should now be absorbed and the meal is ready to serve.
