Lemon Butter Shrimp Pasta

If you love shrimp as much as I do then you will love this recipe! I also love that this dish can be made in 15 minutes! All you have to do is cook the shrimp while the pasta is cooking and before you know it, the meal is ready.


The lemon butter sauce is definitely the star of this dish. It coats the pasta perfectly and adds a nice zest to meal (literally). When you combine the perfectly cooked shrimp with the sauce and the pasta, then you’ll know why this is one of my favorite meals!


Tip: Eric and I use frozen shrimp that we pull out of the freezer the morning we decide to make this meal but you can always use fresh shrimp (which I’m sure tastes way better).

Lemon Butter Shrimp Pasta

This lemon butter shrimp pasta is one of my favorites. The lemon butter sauce is so delicious and tangy because of the lemon zest. This is an easy meal that can be made in 15 minutes and tastes amazing!

Ingredients

  • 1 package Gluten free Fettuccine noodles

  • 1 stick Vegan butter

  • 1 tsp Garlic powder

  • 1 pound Shrimp – peeled, de-veined, clean, and tails off about 12-15 pieces

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/4 cup Freshly squeezed lemon juice

  • 1 tsp Lemon zest

Instructions

  1. Bring a pot of water to boil. Once boiling, add the pasta and cook based on the directions on the packaging.

  2. While the noodles are cooking, in a large skillet, melt the butter at medium heat.

  3. Add the garlic powder and shrimp and then season the shrimp with salt and pepper.

  4. Cook the shrimp until they turn pink. Make sure to flip them halfway through cooking so that it cooks evenly. (Don’t over cook the shrimp because it will become too rubbery.)

  5. Add the lemon juice and lemon zest and turn the heat to low.

  6. Drain pasta when it’s done cooking. Then add the shrimp and lemon butter sauce to the pasta. Serve and enjoy!
